Banana Bread


225g self-raising flour
100g softened butter
4 ripe bananas, mashed
50g dark soft brown sugar
4 tablespoons Golden Syrup
4 eggs
50g pecan or walnut pieces (optional)
50g sultanas (optional)
Preheat oven to 180C/350F/Gas Mark 4
Butter and line a 900g loaf tin.
Mix all ingredients until well combined
Spoon into tin and bake in oven for 50-55 minutes or until a skewer inserted comes out clean.
Remove from oven and allow to rest for 10 minutes before turning out.

Add a cup of dark chocolate chips and this would be perfect! (I add chocolate chips to just about everything I bake!)

I've got to try this recipe (insert huge grin here).

Any banana bread recipe goes down well in this household when I make it, but I think the addition of chocolate in any form would make me just about the most popular bloke in the world 8-)
